With the cold weather approaching, we all crave comfort foods. A lot of the soups we love can be full of heavy creams, cheese, and heavy carbs. I love comfort foods during a snowy day also, but I do not want to have to work off a winter coat a.k.a extra pounds for summer. Here is a great White Chicken Chili recipe that won't pack on extra calories and is filling.

White Chicken Chili
Ingredients:
1 1/4 pounds boneless, skinless chicken breasts (about 2 breasts)
4 cups low sodium chicken stock
2 (15-ounce) cans reduced sodium white beans rinsed and drained
2 (4.5-ounce) cans diced green chiles
3 cloves minced garlic
1 small yellow onion, finely diced
2 teaspoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 cup chopped fresh cilantro
Fresh lime wedges
For toppings: Diced Jalapeno, diced avocado, non-fat sour cream or plain Greek yogurt, shredded cheese, crushed whole wheat tortilla chips
1. Place all ingredients into a crock pot and cook on low (4-6 hours) and high (2-3 hours) the chicken should shred apart when done. Top with squeezed lime and toppings. Enjoy!
